Mike's Asian Slaw

½ Cabbage shredded

½ Jicama thinly sliced

1 Carrot shredded

2 Tablespoons Soy Sauce

1 Tablespoon Rice Wine Vinegar

1 Teaspoon Oriental Mustard

½ Teaspoon Sugar

1 Teaspoon Sesame Oil

Pinch of Black Pepper

2 Tablespoons minced Ginger

Little drop of Sriracha to taste

Toss all these ingredients gingerly. Refrigerate half an hour and toss again. Top with diced green peppers and toasted sesame seeds when you are ready to serve.

Mike's Asian Burgers

·         ½ Pound Ground Chuck

·         ½ Pound Ground Pork

·         2 Chopped Garlic Cloves

·         3 Chopped Green Onions (Scallions)

·         1 Tablespoon Freshly Grated Ginger

·         2 Tablespoons Soy Sauce

·         ½ Teaspoon 5 Spice Powder

·         ½ Teaspoon Sesame Oil

·         Salt & Pepper

Directions: Combine all the ingredients in a bowl. Make patties with the mixture and grill until cooked through. Serve on toasted buns with Asian Slaw. Mike’s Asian Slaw recipe coming soon!

Mike's Mac N' Cheese

In the cold weather I always want comfort food. Here is how I make the best Mac N' Cheese. Like all my recipes it is an outline! Its cooking, everything should be to your taste and preference! Try it out and let me know how it goes. Send me a picture!

You will need:

·         Butter

·         Flour

·         Milk

·         Nutmeg

·         Pasta

·         Mozzarella Cheese

·         Provolone Cheese

·         Sharp Orange Cheddar Cheese

·         Parmesan Cheese

Optional: Bacon, Sausage, Lobster Meat or a Pie Shell

Step 1: The Roux

Over low heat combine equal parts butter and flour until it creates a smooth light brown mixture. Add milk and whisk the mixture until it becomes thick and there are no lumps.

Step 2: The Pasta

Boil water and add the pasta of your choice. Cook until it is Al Dente (still a little firm and drain)

Step 3: Add Cheese

Shred the cheeses and add them slowly to the Roux under low to medium heat until you get a think cheesy paste. Add the mixture to the pasta and spread evenly throughout the pasta. At this point you can mix in sausage, bacon or lobster meat to make it a meal.

Step 4: The Bake

Pour the pasta and cheese mixture into a baking pan or pie crust and sprinkle toasted breadcrumbs on top of it. Bake in the oven at 350° for approximately 20 minutes or until golden brown on top! This is the part where I usually have a beer. Remove let cool for ten minutes and then eat up!
